Executive Chef
MESSINA HOF WINE CELLARS, INC. JOB DESCRIPTION RESTAURANT CHEF AND FRONT OF HOUSE VINTAGE HOUSE SUPERVISOR POSITION OVERVIEW: This exempt position of Head chef and kitchen manager is responsible for all details of running the kitchen. This position will be responsible for coordinating waitstaff, supervising all aspects of the Vintage House front of house, and is responsible for the logistics of all events. POSITION REQUIREMENTS: • 3-5 years previous experience as chef and kitchen manager. Must have a Kitchen Manager’s Certificate. • Experience in waitstaff relations including management, scheduling, planning, delegating tasks to provide superior food and beverage service. • Experience in waitstaff training, development and implementation of training programs • Excellent communication skills, eye for detail, positive motivational attitude. POSITION DUTIES: • Responsible for assisting to maximize sales and control expenses to make restaurant most profitable and run within budgetary guidelines • P.O. generation for all needed merchandise • Keeping accurate inventory of on-hand items • Monthly inventory reconciliations • Overseeing front of house and kitchen staff: hiring, firing, and training • Responsible for overall cleanliness of kitchen • Preparation of meals • Kitchen set up - opening & closing procedures • Maintenance of a 95 or better in Health Department Inspections in Vintage House kitchen, Winebar & Villa • Scheduling & Supervising of Restaurant & Banquet kitchen staff and front of house staff • Responsible for food execution for all events • Responsible for maintaining required front of house and kitchen labor and food costs within budget • Teaching cooking classes as scheduled by Messina Hof • Responsible for menu development and quality control in Vintage House, Winebar & Villa • Responsible for operations of restaurant • Responsible for monthly Vintage House wine inventory at end of month IMMEDIATE SUPERVISOR: Designer Events / Vintage House / Villa Manager and Owner PHYSICAL REQUIREMENTS: Ability to lift 50 pounds from floor to waist. Ability to stand for long periods of time.
